Meal Plan 6/26

So I thought I'd get back to posting my meal plan online... I find that it's a good way to keep my favorite recipes in one place, and since I find many of my favorite recipes online and from my friends' blogs, it makes sense!

My meal plan for this week starts today

Saturday - Homemade tacos

Sunday - In Gilbert

Monday - In Gilbert

Tuesday - Penne a la Betsy, side salad, french bread *note: I don't use shrimp in my dish, but I will probably use diced chicken breast.

Wednesday - Fish Tacos, kettle chips

Thursday - Crockpot Rotisserie Chicken using this recipe for the rub and this method for cooking the chicken, mashed potatoes, corn

Friday - Eat out, at the DBacks game with Ryan!

UPDATE: Made the fish tacos, they were fantastic! I did end up changing the recipe for the sauce, though. I went with a delicious, similar recipe that my mother-in-law, JoAnn, makes. To the 1/2 cup of sour cream, juiced lime, and 3 teaspoons of chipotle sauce, I added a clove of garlic and 2-3 tablespoons of mayonnaise. With this sauce, they were perfect! I will definitely add this to my meal rotation.

Well I must admit I'm having way too much fun with this couponing thing. It started out as more of a necessity with our tight budget and has turned into a fun hobby!

23rd

I had a super fun 23rd birthday on the 15th of this month. We celebrated the weekend before with our good friends Jeff & Ruth. Dad & Lynn came up to watch our kiddos for us! Thanks guys!

Got myself an alcoholic drink. If any of you know me, you know this is a rare thing. I absolutely hate the taste of any alcohol. Frankly, I think wine in particular is a mistake and liken it to drinking orange juice that has sat out for 46 days and then is something you're encouraged to "acquire a taste" for. Don't get me started. Anyway, that's just my opinion :) This drink was some type of peachy syrupy drink. Not too bad.
Afterward we all went to see Iron Man 2, which was HILARIOUS. I loved it.

On my actual birthday, which was a Tuesday, we were staying in Gilbert at Doug & JoAnn's house. I got to shop at Charlotte Russe, my absolute favorite store, with my absolute favorite mother in law :) Thanks for the spending money JoAnn! After Starbucks, some major shopping and a major meltdown courtesy of my eldest son, we picked up lunch at Olive Garden to-go. Then after putting Owen down for his nap he promptly climbed out of his pack n play for the first time. No nap for him!

Ryan watched the boys later on so I could visit my mom's grave. We shared a birthday so she was especially on my mind that day. So glad for the chance to just sit and remember her. It was soothing to my soul.

My fam met up later in the evening at Joe's Real BBQ. It was so cute to watch the cousins play :)

I was worn out by the end of the day and went to bed early! Oh well, it was a blast! Thanks to all my friend and family that made the day extra special for me!

Ordinary Day

Some of my favorite blogs to read are the ones that document the memories of every day life. So I thought I'd be extra intentional today about getting some pictures of my day with my boys!

Owen is a morning person. I don't know where he gets it. Here's his new cheesy camera face!

We headed out to Old Navy to get Owen a new swimsuit. Funny story - Owen loves to see this dog mannequin every time we come here. Well today, I decided right after I took this picture to let him out of his stroller to get a closer look the the dog. To make a long story short, Owen ended up accidentally knocking the little girl mannequin which started a chain reaction and knocked down the entire display of mannequins!! I was mortified, but the sales lady just laughed. She told me she had two kids of her own and not to worry about it. Needless to say, I think I'll keep Owen in his stroller from now on!
After ON we walked to the nearby coffee shop with my friend Ruth and her son (and Owen's bf) Luke. I think Owen is making this face when I told his it's mommy's turn for a sip. Ha!

After our errands I brought Owen home to take a nap. He never actually went to sleep, just played in his room quietly for a few hours.

When Ryan finished work, we headed out to the store to buy my dad's birthday present. Sorry, no pictures - can't give away the gift!

Then we came home and had a yummy dinner of BBQ chicken, corn and baked potatoes.

It was a wonderfully ordinary day :)
