Mmm made a delish recipe for dinner tonight.
Crockpot Chicken Parmesan
2-4 boneless, skinless chicken breast halves
1/2 cup bread crumbs
1/4 cup parmesan cheese
1/2 t Italian Seasoning
1/4 t black pepper
1/4 t kosher salt
1 T olive oil
1 beaten egg
sliced mozzarella cheese
favorite jarred marinara sauce
The Directions:
--spread the 1 T of olive oil into the bottom of your crockpot stoneware insert
--whip the egg with a fork in a separate bowl
--mix the bread crumbs with the seasonings and the parmesan cheese in another separate dish
--dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings
--place the chicken breast pieces in the bottom of the crock
--layer 2-3 slices of mozzarella cheese on top
--cover with entire jar of marinara sauce
--close lid and cook on low for 6-7 hours or high for 3-4. If your chicken is still frozen, it will take longer.
Serve with your favorite pasta.

2 Month Stats
Owen had his 2 month appointment today. It went well. Here are his stats:
Weight: 13.9 lbs (90%)
Height: 25.1 in (97%)
Head circumference: 15.4 in (25%)
When Owen was in the hospital with the UTI we were given an order to have a particular test, called a VCUG, done. We took him to the hospital this week for the test. Basically, they insert a catheter and dye so they can watch where urine goes in his little body. What they found out is that he has grade 3 reflux, meaning the urine does not always go to the bladder and empty completely, it travels up towards the kidneys, which is probably why he got the UTI in the first place. For now he will be on an antibiotic daily to prevent any more UTIs. The doctor is optimistic that he will grow out of it in the next year or so, which about 70% with this problem do. We will retake the VCUG in a year to see if there's been improvement. Pray that it heals up and there will be no need to take any further action!
I would add a picture but because of his shots he's a fussy boy today and I don't think I'd get a good picture out of him!

2 Months
Owen is two months old today! Time has flown by. He is so much fun, though a lot of work. At two months I am starting to see some of his personality and preferences. He is absolutely a cuddle bug. He loves to be held and to snuggle, and I happily oblige when I can. I've also found that he has a temper, especially around eating time! He is a very impatient little guy :) He has started to sleep a little better too, though not through the night. Typically I'm up with him two to three times a night, usually around 11, 3 and 6. He's still young though, and I'm hoping that a full night's rest is around the corner!
